Recipe: Brownie Cupcakes (cheap, fast and TASTY)

I am all about the quick, cheap dessert options.

Actually, we don’t usually eat dessert, but when we have company I try to make something. I like to bake and cook desserts from scratch, but sometimes I just don’t have time!

This year on the Fourth of July, I found myself in that exact predicament. We invited our elder neighbor lady over, and I realized right before she arrived that I had no dessert! I ran to the back and dug in my pantry, producing the ingredients needed for this quick and simple dessert.

Brownie Cupcakes

(I know this isn’t my invention, but it was the first time I had made them and served them, so I’m sharing it proudly LOL!)


  • 1 brownie mix (I can usually find these for around $1, less with a coupon)
  • 1 container of frosting (I snagged these on manager’s clearance near my daughter’s birthday and had some left over)
  • decorations of your choice


It can’t get any easier than this…

Prepare the brownie mix according to package directions. Instead of pouring the batter into a usual brownie pan, use a cupcake pan. I like to spread mine out over a large and small cupcake pan, making 18 treats, but you can use a 12 cup pan and just have larger treats if you’d like. Bake about 15 minutes. 20 if you just make 12. Let cool, pop them out, and frost. Then, decorate!


Because of time, I carefully pried mine out while warm and cooled them on a rack. That only took about 15 minutes, and I was able to frost them and serve them by the time dinner was done!

I used red and blue sprinkles because it was the Fourth, but any decoration or none at all would be fine, too!

The other cool thing is that if you love the edge pieces in a pan of brownies, you will LOVE this recipe. Every treat is an edge piece!!
