Recipe: Beefy Tomato-Chilie Enchiladas – print a FREE 4×6 recipe card and start cooking!

Now that I have released my FREE printable 4×6 Recipe Cards, I plan to have a printable recipe card on hand for any new recipes that I create and want to share.

Since I am on a Pantry Challenge this month, I have been more creative in the kitchen than usual. It’s fun, and it gives me a chance to use every leftover and put a dent into what I have stockpiled.

Today, I am sharing a recipe that I made up because I had an abundance of Pace tomatoes with chilies. I won’t mention HOW I got this abundance, since I am on a Pantry Challenge and not supposed to be adding any inventory, but let me tell you…it was a STEAL!

Tomato-Chile Enchiladas

I plan to share more about this on Friday when I do my weekly update for my Pantry Challenge, but basically my husband stumbled upon CASES of Pace Tomatoes with Chilies at Walmart for 25 cents a can…on day 2 of my challenge. I’m not supposed to be adding to my pantry, but I just couldn’t help myself!

So, he brought these home:

Pace Tomatoes with Chiles

I had tortillas and shredded cheese on hand, plus some sour cream that needed to be used….so I made enchiladas!

I neglected to take pictures of the whole cooking and rolling process, but you can probably figure it out.

Here’s what the end result was:

One change that I made and added to the recipe card was to DRAIN the cans of tomatoes with green chilies. I must have been in the mind set of making cheese dip or something, because I just dumped the whole can into the beef, onion and cheese mixture. Between the juice from the canned tomatoes with green chilies and the enchilada sauce, the end result was a little runny…but it was actually still quite nice. It will be AWESOME next time when I drain the tomatoes with chilies!!

After letting them sit for a few minutes to cool and set up, we topped them with sour cream and chowed down!

This was some seriously good eats, and as Hubby helped me proof-read the recipe card, he commented that he “had fond memories”. YAY!
